Instructions:

  1. Cook the chorizo: In a large skillet, cook the chorizo over medium-high heat, breaking it up with a spoon until it is fully cooked and the fat is rendered.
  2. Cook the eggs: You can either remove the chorizo and cook the eggs in the drippings, or push the chorizo to one side of the pan and scramble the whisked eggs in the same skillet until set. Combine the egg and chorizo mixture.
  3. Prepare the beans: Warm the beans in a separate small pot, or add them to the chorizo pan if using a large enough skillet to heat through.
  4. Warm the tortillas: Heat the flour tortillas on a dry comal or skillet for a few seconds on each side to make them pliable.
  5. Assemble the burrito: Lay a tortilla flat and spoon a layer of the bean mixture, followed by the chorizo and egg mixture, and then sprinkle shredded cheese over the top.
  6. Fold and serve: Fold in the sides of the tortilla, then fold the bottom part up and roll it tightly into a burrito. You can also pan-fry the assembled burrito seam-side down for a minute or two until golden brown to seal it and melt the cheese. Serve with salsa or avocado slices if desired. 

Spanish-Style Baked Eggs and Chorizo Dish (Skillet meal)

For a dish closer to something you might find in Spain:

  1. Sauté sliced Spanish-style chorizo, onions, and peppers in olive oil in an oven-safe skillet.
  2. Add canned diced tomatoes, white beans (like cannellini or butter beans), and seasonings such as smoked paprika, cumin, salt, and pepper. Simmer for about 10 minutes until the sauce thickens.
  3. Create wells in the mixture and crack eggs directly into them. Season the eggs.
  4. Sprinkle with Parmesan or other cheese and bake in a preheated oven at 400°F (200°C) for 5-8 minutes, or until the egg whites are set but the yolks are still runny.
  5. Serve immediately from the skillet, garnished with fresh herbs and with crusty bread on the side.
